Pulses Beat Pork for Trimming Belly Fat and Boosting Iron

The Summary

In this randomized crossover trial, 47 older adults aged 60 and above consumed either a pulse-protein diet or a meat-protein diet (lean pork) for eight weeks each. Both diets aligned with US dietary guidelines. While both groups saw improvements in glucose, cholesterol, inflammation, and overall body fat, the pulse-based diet yielded distinct advantages. Specifically, the pulse diet led to a significantly greater reduction in the visceral-to-total fat ratio and, surprisingly, a larger increase in ferritin (iron storage) compared to the meat-heavy diet.
